Papas con Chorizo | Chorizo Tacos

Dinner today was papas con chorizo or potatoes with Mexican chorizo. I usually make it for breakfast and stuff it into a burrito. But I wanted to have tacos tonight because Taco Tuesday.

For toppings I used chopped cilantro and Hatch green chile, sour cream, cilantro-lime sauce, and Mexican blend cheese (cheddar, Monterey Jack, Asadero, queso quesadilla).

It's one of my favorites because it's so flavorful and easy to put together. I hope I have access to good quality chorizo in my new place, otherwise I'm really going to miss this.
