Mexican Tomato Sauce, or ranchero sauce, is a flavorful and adaptable sauce that goes well with many different Mexican dishes. It enhances the flavor of your favorite tacos, burritos, enchiladas, and even tortilla chip dip with a spicy and tangy kick.
Ingredients: 2 cups diced tomatoes. 1/2 cup diced onion. 2 cloves garlic, minced. 2 tablespoons vegetable oil. 1 jalapeo pepper, diced remove seeds for milder sauce. 1 teaspoon cumin. 1/2 teaspoon paprika. 1/2 teaspoon dried oregano. Salt and pepper to taste. 2 tablespoons fresh cilantro, chopped.
Instructions: In a saucepan, heat the vegetable oil over medium heat. Add the chopped onion and garlic, and saut until fragrant and softened. Add the chopped tomatoes, dried oregano, cumin, paprika, jalapeo pepper, and cumin. Simmer until the sauce thickens, stirring now and then, for 15 to 20 minutes. To taste, add salt and pepper for seasoning. Take off the heat and add the fresh cilantro. Let the ranchero sauce cool before putting it in the fridge in an airtight container.
