Ingredients: 1 lb pork belly, skin-on. 1 tsp salt. 1/2 tsp black pepper. 1/2 tsp paprika. 4 burger buns. 1 cup arugula leaves. 4 slices provolone cheese. 1 Meyer lemon, zest and juice. 2 tbsp mayonnaise. 1 clove garlic, minced. 1 tsp honey. 1/4 cup red onion, finely chopped. 1/4 cup cucumber, diced. Salt and pepper to taste. Vegetable oil for frying.
Instructions: Start by heating the oven up to 300F 150C. Use a sharp knife to make cuts in the pork belly's skin. Season the pork belly with salt, black pepper, and paprika. Cover the skin as well. A wire rack should be set in a roasting pan. Place the pork belly on it, skin side up. After the oven is hot, roast the meat for two and a half to three hours, or until it is soft and the skin is golden brown. Put the Meyer lemon relish together while the pork belly roasts. Put the minced garlic, honey, red onion, cucumber, salt, and pepper in a bowl. Add the lemon zest and juice. Combine well, then put in the fridge until needed. When the pork belly is done, take it out of the oven and let it rest for a few minutes. Cut it into thick pieces after that. Put vegetable oil in a pan and heat it over medium-high heat. This should take about two to three minutes per side. Fry the pork belly slices until they are golden and crispy on both sides. Put paper towels down to dry. In the skillet, toast the burger buns until they get a little brown. Spread a lot of the Meyer lemon relish on the bottom half of each bun before putting the sandwiches together. Add some crispy pork belly, arugula leaves, and a slice of provolone cheese on top. Last, put the top half of the bun on top.
