Peas and rice

( jamcian / Trinidadian style, I’m partially Trini so I would say Trini)

Ingredients:

1 can Coconut milk 3 cups of rice 1 ½ white onion chopped 4-5 scallions chopped I can dark red kidney beans 1 can black beans ( I like the mix) Seasonings ( pepper,salt,onion powder, garlic, and thyme) about 1-2tsp. *taste and adjust to your liking ¼ cup olive oil ½ chicken cubed stock
