This week I’m sharing my recipe for an easy midweek meal, which goes down well with the whole family. My healthy sausage and potato bake is low in fat too as I used chicken sausages in place of normal sausages. It is easy to make and perfect for chilly evenings as well, when you want a hearty meal. Shove it in the oven and it won’t take long.

Tomato, Greens, & Chickpea Skillet
Another winner from Better Homes and Gardens. I found this recipe in their December 2013 edition. The hubby enjoyed it and even said it filled him right up. This is unusual and I tend to think he has a tapeworm in his gut, but I think all of the powerful proteins in this meal lead a person to fill fuller much quicker.
3 Tbsp. olive pil
1 medium onion, chopped
1 clove garlic, minced
1 Tbsp. curry powder (I just did a combo of cumin and paprika)
1 14.5-oz. can diced tomatoes, undrained
1/4 tsp. salt
1 15-oz. can chickpeas, rinsed and drained
2 cups torn Swiss chard or spinach
4 eggs
In a large skillet heat 2 Tbsp. of the olive oil over medium heat. Add onions and garlic; cook and stir 5 minutes. Add curry powder; cook 1 minute more. Add tomatoes and salt; cook and stir 3 minutes more. Add chickpeas; cook and stir until heated through, about 3 minutes. Add chard; cook and stir until slightly wilted, about 3 minutes.
Meanwhile, in another skillet heat remaining 1 Tbsp. olive oil over medium heat. Break eggs and gently slip them into the pan, one at a time. Season to taste with salt and pepper. Cook, covered, to desired doneness. Serve eggs over tomato-chickpea mixture.
