Visited Kmetija Dolenc a Holstein cow dairy farm no more than 30 minutes from Ljubljana. We met with the third generation brother and sister who are running the farm along with their father. Another sister is not involved. He’s the farmer and she’s the cheesemaker. Their grandfather started the farm in the 1980s. The farm is 60 hectares with 60 milking cows, 15-20 dry cows, and 80-100 heifers. They produce 5,000 liters of milk per month. They make milk, yogurt, cottage cheese, fresh cheese, and sour cream. All raw milk except yogurt because the cultures are finicky. Soon they will start making hard cheeses. Two months ago they got a milking robot to automate the milking process. They also have a milkomat where people can come and fill up their bottles themselves or even get bottles. I’d heard of these machines in Italy.
