I apologize for not having a picture to accompany this post, but I forgot to take one!
Turkey Meatloaf!! Yum! I have made this before, but not the mini version. It is a pretty easy recipe.
1lb of ground/minced Turkey
1 Large egg
1 medium size onion
1-2 cloves of garlic
1/4 bread crumbs
1 Tbsp Ketchup
Salt
Pepper
Italian seasoning
1/4 cup ketchup
1 tbsp brown sugar
In a medium frying pan saute your onions and garlic in a little oil. Once cooked and cooled, put in a large mixing bowl. Add your egg, bread crumbs, 1tbsp ketchup, salt, pepper and Italian seasoning, mix together. Crumble your turkey over the mixture and mix that all together.
To make your mini-loaves - use a muffin tin. You can make it in a regular size loaf pan, but I like the mini ones the best. Form tiny loaves in each spot of your muffin tin, filling them almost full.
In a small bowl, mix the rest of your ketchup and the brown sugar together. Brush over the top of each mini-loaf. If you want it to be sweeter, use more of this mixture. I personally like the taste of the turkey so i don't use too much of this ketchup/brown sugar mixture on top.
Baked at 350 degrees F. for about 30 minutes. 1lb of turkey makes about 12 mini-loaves or 1 regular loaf.
Notes:
The last time I made this I didnt have any onions or garlic, so I just used garlic powder and onion powder and it worked just fine!!
You can use as much or as little italian seasoning as you like... all depends on how you want it to taste!
When making the mini-loaves it is pretty easy to see when they are done. But when making regular size loaf I always use a meat thermometer. Ground turkey must be cooked to 165 degrees F.
