MISS GRAY'S RF FRIENDLY WAFFLES
Hello RF'ers!
This week we had a very lovely visit from one of our RF Family members! Jessica Gray! She's on our Rapid Fitness Program and boy does she kick some butt! We were lucky enough to try some of her very own RF friendly food creations (and can we just say, Jess you can come visiting anytime!)
One of those creations was her RF Waffles, using ingredients that we recommend on our RF Kickstart program. She even brought in her waffle maker and we had a cook up at RF HQ! They were pretty darn tasty & perfectly healthy in every way!

So, we decided we would re-create Jess' waffles and and a few extra ingredients to spice things up! Some are sweet and some are savoury - so there will be something to suit everyone!
Right. Let's get to it..
Jess Gray's RF Friendly Waffles
INGREDIENTS - Makes 3-4
2 Free range eggs 1 Heaped scoop of vanilla clean lean protein 80ml Unsweetened almond milk 3 tbsp Full fat coconut cream 2 tbsp Ground almonds or LSA 1/4 tsp Gluten free baking powder Real vanilla (optional)
EXTRAS
Chocolate Waffles with mixed berries
1 tbsp Cacao powder 1/2 A cup of Mixed berries
Savoury breakfast Waffles
Replace the Vanilla Clean Lean Protein with 1 heaped tbsp of coconut flour 4 Free range eggs 2 Slices of Free farmed Bacon 1 Avocado, sliced S + P Fresh Thyme
Buttery Goodness
1 Dollop of butter per waffle
Make sure you use butter or coconut oil to grease the waffle maker so they don't stick! Although most waffle makers will be pretty non-stick anyway!
STEP 1
Make sure your waffle maker is on first!
Place all the ingredients in a bowl and beat with an electric beater until well combined. If you don't have an electric beater, use a fork or whisk and give it a good mix!
STEP 2
Brush your waffle maker with melted butter or coconut oil and pour in the mixture.
Jess' tip is to make sure the little black dividers in the waffle maker are covered so you have a full fluffy waffle!
STEP 3
Your waffles are ready to be topped with whatever you wish! We decided to make more than one batch and cook the standard recipe, a chocolate berry waffle mix & a savoury one. Just remember to add the cacao to the mix if your making the chocolate recipe, and substitute the vanilla Clean Lean Protein with coconut flour if making the savoury version.
STEP 4
We cooked up some free range bacon, sliced them into halves, sliced some avo, and fried an egg in coconut oil. Then stacked everything on top! A sprinkle of fresh thyme and some S + P and she's perfect! This was our savoury waffle!
STEP 5
For the chocolate berry waffles, we warmed up some mixed berries and spooned them on top! Simple.
STEP 6
And finally, the original waffle we just topped with a little bit of butter and let it melt... yum!
