I tried miyoko's juicy "chicken" from her vegan meat cookbook and the taste and texture are fantastic. I fucked it up a little so it didn't hold it's shape when I flipped it during the pan searing faze so instead I made little chicken chunks instead of a full loaf.
This is my dinner which includes that chicken with a spicy sauce.
