This Lemon Spoon Cake is a delightful dessert that combines the tangy flavor of lemons with a moist and fluffy cake texture. It's easy to prepare in a slow cooker and makes for a perfect treat any time of the year.
Ingredients: 1 cup all-purpose flour. 1/2 cup granulated sugar. 2 teaspoons baking powder. 1/4 teaspoon salt. 1/2 cup milk. 1/4 cup unsalted butter, melted. 1 tablespoon lemon zest. 1/4 cup fresh lemon juice. 1/2 cup water. 1/2 cup brown sugar. Vanilla ice cream optional, for serving.
Instructions: Put flour, sugar, baking powder, and salt in a bowl and mix them together. Add milk, melted butter, lemon zest, and lemon juice and mix well until you get a smooth batter. Place the insert in the slow cooker and grease it. Then add the batter. In a different bowl, mix brown sugar and water together until the sugar is gone. Put this on top of the batter. Put the lid on top and cook on high for two hours, or until the middle of the cake is set. If you want, you can serve it warm with vanilla ice cream.
