Ingredients: 4 chicken breasts. 1 cup rice. 2 cups chicken broth. 1/4 cup lime juice. 1/4 cup chopped cilantro. 2 cloves garlic, minced. 1 teaspoon cumin. Salt and pepper to taste.
Instructions: In a large skillet, brown chicken breasts over medium heat until cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside. In the same skillet, add rice, chicken broth, lime juice, cilantro, garlic, cumin, salt, and pepper. Bring mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed. Return chicken to skillet, cover, and cook for an additional 5 minutes to heat through. Serve hot, garnished with extra cilantro and lime wedges if desired.
