if he's a ghoul, maybe he has a really low rc count, hence fighting with his bare hands and not a kagune? i wouldn't be that surprised if he was human though. hide fooled ghouls by wearing a ghoul's clothes so. :/
Hmm, but Hide was trying to pass by unnoticed, while Souta would have had to come regularly to the Restaurant, and be undetected each and every time. If Souta were human if would also mean he pretended not to eat in front of Ami, which I feel would have been a lot of hassle. I mean, if you could eat why not eat so that Ami would be less suspicious?
