Agreed there.
With Lotor it works, because Dreamworks never made a villain like him before, so you don’t see it coming as much. There were clues dropped about his true nature, so the twist makes sense.
However, the same can’t be said for these new Disney movies, because, like you said, everyone can see it coming a mile away. If anything, a Disney movie having a straight up villain would be a breath of fresh air, because I never seen one of those in ages outside of maybe The Incredibles 2, but I still found that villain underwhelming.
