B’stilla is a specialty of the town of Fes, made from shredded meat with cinnamon, spices, and almonds, wrapped in a flaky pastry. Often done with chicken, this one is the traditional way, with squab (pigeon). Sweet (with a bit of powdered sugar and more cinnamon), savory, and delicious. This dinner at Dar Ori included Moroccan salads to start — seasoned carrots, honeyed pumpkin, eggplant, green peppers and tomato, olives — this never gets old.
