Mountain Yam! A strange root vegetable native to the Nagano prefecture. It looks similar to ginger, but has no smell and has the most interesting texture. Once the skin is removed the yam feels sticky and goopy, almost egg-like. It is often served grated, where it seems almost like cornstarch or a custardy texture. We added it to vegetable pancakes, it made them so light and fluffy! Dan also cubed and fried some, almost like hashbrowns. I had never seen or heard of such a thing before, yay for learning about new vegetables!
