We decided to do a bit of an experiment. Both of these knives are going to be completed as honesuki kitchen knives. We have always quenched our knives in water, and have achieved good results, but have heard other smiths attest that oil is the way to go. How could we know for ourselves? Both knives are fully hand forged from W2. The knife in the right was winched in Parks 50, the knife in the left in water. What we are seeing, and the picture does not show, is the depth of hardening from the different quenching mediums. The oil does not harden as deeply. As a result, the knife in the right has developed a small hamon roughly 1/8” to 3/16” in width.
