Get into the Halloween spirit with these adorable mummy cookies! A buttery sugar cookie base decorated with royal icing bandages and spooky candy eyes.
Ingredients: 2 1/2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 3/4 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. Royal icing white and black. Edible candy eyes.
Instructions: In a bowl, whisk together flour, baking powder, and salt. In another bowl, cream together softened butter and granulated sugar until smooth. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and chill for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out one disk of dough on a floured surface to about 1/4 inch thickness. Use a mummy-shaped cookie cutter to cut out shapes and transfer them to the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Once the cookies are completely cool, use white royal icing to pipe mummy bandages onto each cookie. Attach edible candy eyes onto the bandages using a small dab of royal icing. Use black royal icing to pipe small dots for the mummy's eyes and mouth. Allow the icing to set before serving or storing the cookies.
