So I find this fascinating because I go to Princeton, where we do have a College of Engineering and a College of Arts and Sciences but no professional graduate programs. We’re labeled a university but I totally see how the line gets really fuzzy.

Princeton doesn't have a medical school or a law school?  Fascinating.  That's a difference from the other Ivy schools.  I'm assuming you have graduate programs in individual academic departments (i.e. you could get a PhD in something).
