Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup powdered sugar. 1/2 cup vegan butter such as Nature's Path Organic Vegan Buttery Spread.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine all-purpose flour and powdered sugar. Add vegan butter and mix until a dough forms. Roll out dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet. Bake for 12-15 minutes or until edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
