Ingredients: 4 salmon fillets. 2 nectarines, sliced. 1/4 cup soy sauce. 2 tablespoons honey. 1 tablespoon Dijon mustard. 2 cloves garlic, minced. 1 teaspoon fresh ginger, grated. 2 tablespoons olive oil. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Preheat the grill to medium-high heat. In a small bowl, whisk together soy sauce, honey, Dijon mustard, garlic, ginger, and olive oil to create the marinade. Place salmon fillets in a shallow dish and pour half of the marinade over them. Allow to marinate for 15-20 minutes. While marinating, brush nectarine slices with olive oil and season with salt and pepper. Grill salmon fillets for 4-5 minutes per side, basting with the remaining marinade. In the last 2 minutes of grilling, add nectarine slices to the grill, cooking for 1-2 minutes per side until they have grill marks. Remove salmon and nectarines from the grill, garnish with fresh cilantro, and serve immediately.
