Ingredients: 2 pork tenderloins about 1 pound each. 1/2 cup balsamic vinegar. 1/4 cup honey. 2 cloves garlic, minced. 1 teaspoon dried thyme. Salt and pepper to taste. 2 cups cherry tomatoes, halved. 1/4 cup chopped fresh basil. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: In a small bowl, whisk together balsamic vinegar, honey, garlic, thyme, salt, and pepper. Place pork tenderloins in a slow cooker and pour balsamic mixture over them. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until pork is tender and cooked through. While pork is cooking, prepare the cherry tomato salad. In a medium bowl, combine cherry tomatoes, basil, olive oil, balsamic vinegar, salt, and pepper. Toss gently to coat. Serve sliced pork tenderloins with cherry tomato salad on the side. Enjoy!
