Have some Neil head cannons:
He likes to cook. And if he's going to cook he's going to make everything possible from scratch. Having spaghetti night? He starts the sauce in the morning and by the afternoon he's covered in flour from kneading the pasta before it's cut.
He's rubbish at making tea. He either over steeps or under steeps and there is no in-between. He can mix most beverages but he just can't get tea right.
If he has a desk, it is COVERED in souvenirs and little trinkets. He just has to pick up something in every city he visits. New York? Tiny statue of liberty. Paris? Tiny Eiffel tower. Athens? Tiny statue of Athena.
He's definitely the kind of person who buys stickers with the intention of putting them on a water bottle but then he doesn't want any sticker to "feel left out" so none of them end up on the bottle.
He's physically incapable of not talking without moving his hands. No clue where he picked it up. But he'll say it's for emphasis.

Okay, first of all, I love how polarising the concept of Neil and cooking is. I am very much team yes cooking, and doubly so if it means Neil is making a mess everywhere.
And I can relate to having problems with timing tea preparation, haha. I think it fits his chaotic nature, like he probably forgets about it steeping at least once.
Neil and souvenirs. Yes. Absolutely. It's just endearing, but not as much as what you wrote about the stickers,
