I think there were times in which they couldn't help but think they'd made a terrible mistake; not on their behalf, but Bree's. It was so hard for her to adjust to an environment which wasn't dog eat dog, whereby the burning in her throat never diminished despite the amount of deer she felled.
And yet, somehow, they knew that it would eventually be okay as long as Bree believed it would be okay because they had done this before with Jasper.
Sure, Jasper was a skilled killer—a tool for war and death—but despite the amateurish way in which Bree was forged, her vampirism was found in much the same way. It was an impossibility for Esme to remove her from their coven. Their patience had allowed Jasper a new life, why could they not do the same for her?
And, despite many objections from within the coven itself, Esme stood firm in reminding them that their flaws had not seen them outcasts, Even as Edward killed multiple people during his rebelious era, even as Jasper fought not only in wars waged by vampires by humans too, he was not turned away. In fact, Edward was welcomed home.
Esme's actions and decisions are only ever based on the good of others. If Esme didn't think that Bree could cope, then she would have been removed. But seeing her there in that field with terrified, red eyes, Esme knew that Bree wanted more than the 'life' she had been thrown into without choice.
