This chicken in the slow cooker with bacon gravy is delicious and comforting. It's great for busy weeknights or lazy weekends. While the chicken cooks in the savory gravy, it gets tender and flavorful. Adding bacon gives the dish a smoky richness that takes it to the next level.
Ingredients: 4 boneless, skinless chicken breasts. 8 slices bacon, diced. 1 onion, finely chopped. 3 cloves garlic, minced. 1 cup chicken broth. 1/2 cup heavy cream. 2 tablespoons all-purpose flour. Salt and pepper to taste. Chopped parsley for garnish.
Instructions: In a skillet, cook diced bacon until crispy. Remove bacon and set aside, leaving the bacon fat in the skillet. Season chicken breasts with salt and pepper, then sear them in the skillet with the bacon fat until golden brown on both sides. Transfer the seared chicken breasts to the slow cooker. In the same skillet, saut onions and garlic until soft and fragrant. Sprinkle flour over the onions and garlic, stirring to combine and cook for 1-2 minutes. Slowly pour in chicken broth while stirring continuously to prevent lumps from forming. Stir in heavy cream and bring the mixture to a simmer until thickened. Pour the gravy over the chicken breasts in the slow cooker. Cover and cook on low for 4-6 hours or until the chicken is cooked through and tender. Once done, remove chicken from the slow cooker and keep warm. Using an immersion blender, blend the gravy until smooth. Alternatively, transfer the gravy to a blender and blend until smooth. Stir in the cooked bacon bits to the gravy. Serve the chicken breasts with the bacon gravy poured over the top, garnished with chopped parsley.
