I'm looking to read some Punisher comics but not sure where the best place to begin is. Do you have any recommendations?

I'd start with Ennis and Dillon's "Welcome Back Frank," unless you want to go full VHS, in which case you should get Essential Punisher 2 (the start of the ongoing series).
