Childhood and love
I am making a simple dinner for myself and my child. He's decided that my chicken veggie fry up is the new Greatest Thing Ever and thank goodness because I'm broke. I'm putting the ingredients together and I realize it's pretty much the same thing my ex husband used to cook for me when we lived together (we were broke then too) only he used Ramen noodles and I use potatoes. We don't speak often and I don't really care for him or how he chooses to live his life but we created this little person together and my child will always be our child. I wish more bitter divorcing parents could hold tightly onto their happy memories of the person they're leaving behind because you're going to be raising someone who will always be part of both of you. I love remembering little bits of when we were happy and telling my son all about all of the best parts of his dad that he carries with him. Recipe Minced garlic One yellow onion Chicken (I used two boneless skinless breasts but any will work) Cumin Pepper Oil Frozen peas Frozen corn Boiled new potatoes Butter Basically I sauté the onions and garlic in a little oil, chop the chicken into strips and add cumin and pepper and fry until you can't see the pink. (I don't measure spices or oil sorry!) Turn the heat to low then add the frozen peas and corn and heat through. Add the boiled potatoes and a bit of butter and mix until everything is jumbled and soft. I don't add salt because I use a ton of garlic. Hee.
