A rich and flavorful French Onion Soup without the need for traditional stock, making it a quick and delicious option for a cozy meal.
Ingredients: 4 large onions, thinly sliced. 3 tablespoons butter. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 4 cups water. 2 tablespoons all-purpose flour. 1/2 cup dry white wine. 4 slices baguette. 1 cup Gruyere cheese, grated.
Instructions: Melt the butter in a big pot over medium-low heat. It will take about 20 minutes of cooking after adding the sliced onions until the onions turn caramelized. Add in the dried thyme, salt, and black pepper, chopped. Add two more minutes of cooking. Put the flour on top of the onion mixture and mix it in well. Add the white wine and water and stir all the time to avoid lumps. Turn the heat down to low and let it cook for 15 minutes. Toast some baguette slices and heat up the broiler while the soup is simmering. Put the soup into bowls that can go in the oven. Add a toasted baguette slice to each bowl and sprinkle Gruyere cheese on top of each. Put the bowls under the broiler for two to three minutes, or until the cheese melts and bubbles.
