To promote breast cancer awareness, as well as honor her Los Angeles fans, Sheryl Crow teamed up with Yoplait’s Save Lids to Save Lives program to present a FREE concert at the Pantages Theatre in Hollywood, CA on Tuesday, November 16. Yoplait was generous enough to invite Nibbles & Feasts and fellow bloggers to a night out, Sheryl Crow's sound check, drinks at the W Hotel and appetizers at Cleo. As if that wasn't enough, the "Pink" carpet treatment, and Sheryl Crow's Concert! Breast cancer is a year-round issue and Yoplait has teamed up with Sheryl Crow to help spread the message of breast health and the importance of raising funds for the cause. Through Yoplait’s Save Lids to Save Lives campaign, special pink lids topped Yoplait yogurt cups in September and October. For every pink lid saved and sent in by Dec. 31, 2010, Yoplait will donate 10 cents to Susan G. Komen for the Cure®, up to $1.6 million, with a guaranteed minimum donation of $500,000. During the past 12 years, Yoplait has donated more than $25 million to the breast cancer cause through Save Lids to Save Lives and other initiatives. WOW! Yes WOW!
Never in a million years would I have thought that the oatmeal cookie I had today was gluten-free. Gluten-free products (cookies in particular) have a stigma of dry, tasteless, crumbly cardboard. I purchased a 12oz container of WOW Baking Company Oregon Oatmeal Cookies today and totally shot the gluten-free reputation to hell. Not even a store bought, gluten-lugging oatmeal cookie can top this.... NO Hydrogenated oils NO Refined sugars NO Artificial flavors NO Wheat and gluten! YES Chewy Delicious Yummity Goodness!!!!
Did I mention that they contain cranberries and apricot bits?
To all my Celiac Disease (Gluten intolerance) readers, your oatmeal cookie prayers have been answered! If your local grocery store (in my case, Whole Foods) does not carry WOW Baking Company products, don't sweat it. You can purchase online at the WOW Baking Company website. Other cookie flavors include: Lemon Burst, chocolate chip, snickerdoodle, ginger molasses, peanut butter and brownie. If you prefer exploring outside the gluten-free cookie realm, they also carry brownies and cake mix. Now all I have to remember is that Gluten-free doesn't mean fat-free :)....
Don't mind the missing cookies. :D
What do I do with this white block?
Tofu is very mysterious and could be very intimidating to eat and prepare. My relationship with tofu has been a steady one...too steady. I tried the safe and easy approach for many years. I would cut it up and throw it in a frozen veggie stir fry. Sometimes I would even eat it raw, right out of the package..whoopee (being sarcastic here)! I was ready for the next step... I attended Tofu U! Yes, Tofu U and majored on Tofulosophy! I learned how to create fabulous tofu dishes, health and environmental benefits of tofu and where it comes from. I learned that tofu keeps you full, satisfied and full of energy with no to little saturated fat and the only source of complete protein. Even animal based proteins don't stack up to the power of the mighty white block! (This is awesome news for those of us who love to eat!!).
Spicy Peanut Stir Fry (This stir fry can also serve as filling for lettuce wraps. Just fill and roll)
Serves 6
1 pkg Nasoya® Extra Firm tofu, patted dry and cut into ½” cubes
2 carrots, julienne
1 1/2 cups snow peas
1 cup water chestnuts
2 tbsp canola oil
1 cup peanut sauce, store bought
In a medium bowl, whisk the soy sauce, peanut butter, rice vinegar, water, chili paste, sugar, and garlic and set aside. Heat 1 tbsp of oil in a large nonstick pan over medium high heat. Once hot, add the tofu to the pan. Allow the tofu to cook for about 4 minutes or until lightly browned. Flip the cubes and cook an additional 4 minutes. Reduce the heat to medium and add remaining 1 tbsp of oil and vegetables. Stir often to cook evenly. When the vegetables are almost cooked add the stir fry sauce to the pan. Reduce heat to low and stir for 2 minutes. Serve over rice or noodles or roll in a lettuce leaf. Enjoy!
and for dessert.......
Chocolate Mousse (ONLY 250 Calories!)
8 servings
Serving Size: ½ cup
1 pkg Nasoya® Silken tofu
3 tbsp sugar
2 tsp vanilla extract
2 cups chocolate chips
Put the tofu in a food processor and blend until completely smooth, about 1 minute. Blend in the sugar and vanilla extract. Melt the chocolate chips in the microwave oven, on the defrost setting, for approximately 3 minutes stopping to stir at least once. (Alternatively, the chocolate chips can be melted in a double-broiler, while stirring constantly to prevent burning). Add the melted chocolate chips to the tofu mixture and blend until smooth. Transfer to eight serving bowls or glasses, cover the top of each with plastic wrap and refrigerate for at least 4 hours before serving. Enjoy!
