Kitchen Sink Cookies

Lazy Sunday afternoons equals baking time! This recipe is called Kitchen Sink because I threw in ingredients I had lying around in my kitchen. Since I was using dates in the recipe, I meant to cut down on the amount of sweetener but, um, I forgot. So if you decide to try this, I recommend using the amount listed below (unless you have a major case of sweet tooth then try double the amount!)

You can also use any nut flour; I used cashew flour because I had some at hand and hadn’t had the chance to use it yet.

Ingredients 1 cup of cashew flour 1/4 teaspoon of xanthum gum 1/4 teaspoon of baking soda 1/4 teaspoon of cinnamon powder 1/4 teaspoon of sea salt 1/4 cup of coconut flakes 1/3 cup of chopped dates 1/2 cup of chocolate chips 1/4 - 1/2 cup of melted coconut oil 2 tablespoons of agave nectar 1/4 cup of water

Mix all the dry ingredients together (except for the chocolate chips - I add them right before I put the cookies in the oven. I don’t know why I do this.) Mix all the wet ingredients together. Combine everything so that becomes a consistent batter. Now add the chocolate chips. Drop spoonfuls of the cookie batter onto a parchment-lined baking pan. Place in the oven for 20 minutes at 350 degrees. Let it cool before serving.
