A tasty gluten-free Paleo birthday cake made with almond and coconut flour, honey, and coconut sugar for sweetness. The frosting is just right. Great for celebrating important events!
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/2 cup coconut sugar. 1/4 cup honey. 1/2 cup coconut oil, melted. 4 large eggs. 1 teaspoon vanilla extract. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsweetened almond milk.
Instructions: Set the oven to 350F 175C and heat it up. Prepare two 8-inch round cake pans by greasing them and lining them with parchment paper. Combine coconut flour, baking soda, salt, almond flour, and coconut sugar in a large bowl. With a whisk, mix the eggs, honey, almond milk, melted coconut oil, and vanilla extract in a different bowl. Slowly add the wet ingredients to the dry ones while stirring them together until they are well mixed and smooth. Spread the batter out evenly in the cake pans that have been prepared. In a hot oven, bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean. After taking the cakes out of the oven, let them cool for 10 minutes in the pans before moving them to a wire rack to cool all the way down. Put the cake layers together with your favorite frosting or topping after they have cooled. Decorate however you like, and have fun!
