For a quick and healthy snack, these blueberry protein balls are gluten-free, vegan, and full of protein. They give you a tasty energy boost whenever you need it thanks to the oats, blueberries, almond butter, and vegan protein powder that are in them.
Ingredients: 1 cup gluten-free rolled oats. 1/2 cup dried blueberries. 1/2 cup almond butter. 1/4 cup maple syrup. 2 tablespoons vegan vanilla protein powder. 1 tablespoon chia seeds. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Pulse the rolled oats in a food processor until they are very small. In a food processor, put in the salt, protein powder, chia seeds, almond butter, maple syrup, and dried blueberries. Add the water and mix it in until it forms a sticky dough. Make little balls out of the dough that are about an inch across. Put the balls on a baking sheet that has parchment paper on it. Put it in the fridge for at least 30 minutes to make it firm. Once the energy balls are firm, put them in a container that won't let air in and put it in the fridge for up to a week.
