This roasted carrot and farro recipe looks gourmet, but it's surprisingly easy to make! This is the perfect holiday vegetarian main dish.
we really need to eat dinner earlier, but I spent this afternoon after work going grocery shopping, cleaning various things around the house, doing laundry, and watering the beet, kale, carrot, parsnip, arugula, and radish seeds I planted three days ago. (tbh I'm getting a little anxious about them, but carrot seeds take 10 to 21 days to germinate, beets 5-14, arugula 5-7, radish 3-10, kale 3-10, and parsnips two to three weeks.)
Sunday prep- couples mason jar salads. Two * three different salads. Prep was inefficient if not filled with love. 💗💖💕 Don't know what we like yet. And I'm not making six salads just to find out they all tastes like trash.
To be honest- I'm actually pretty excited for these salads. There's a sweet fruit kale salad with a maple lime dressing that I can barely wait for. A Mexican inspired salad and I forgot the avocados. And one with a peanut lime dressing and some random veggies from my fridge. My lab partner is ready to fuck with that dressing. Salads adapted from below:
Pack one of these 5 vegan mason jar salad recipes for a healthy lunch on-the-go! They're easy to assemble ahead of time & full of nutritious
Also made six pumpkin overnight oats jars. Lined up all the jars and moved them across the scale, one at a time, measuring the things I'm adding. Turns out my measuring cups are definitely off from the weight! But did I track any of those things? Absolutely not. But maybe next time.
Next prep is on Wednesday night. But I could start on Tuesday after the gym if I'm not too tired.
Reflection: Having prepped meals in my fridge thrills me. It's an investment in my health and my husband's health. It's a good example for my kiddo. And it's a kindness for my future self. I am grateful for the work that I've put in to believe that I deserve health and nourishing foods. For so long- I settled for crap food that has destroyed my body.
We had a busy weekend with two trips across town and multiple friend hangouts. I don't feel like I did much. It was soothing to cut up a cucumber from the farm (I have so much privilege) or dance around to nineties music will I cleaned dishes. The pace felt slow and right and full of joy. Maybe most preps won't be like this. But I'm grateful for today's.
