These low-fat oatmeal raisin cookies are a healthier version of the classic treat, perfect for guilt-free snacking.
Ingredients: 1 cup rolled oats. 3/4 cup whole wheat flour. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/4 cup unsweetened applesauce. 1/4 cup honey. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup raisins.
Instructions: Preheat your oven to 350F 175C. Line a baking sheet with parchment paper. In a bowl, mix the rolled oats, whole wheat flour, baking soda, ground cinnamon, and salt. In a separate bowl, whisk together the unsweetened applesauce, honey, egg, and vanilla extract. Combine the wet ingredients with the dry ingredients until well incorporated. Stir in the raisins into the cookie dough. Scoop spoonfuls of dough onto the prepared baking sheet, spacing them apart. Flatten each cookie slightly with the back of the spoon. Bake for 10-12 minutes or until the edges are lightly golden.
