Three Sisters Pozole, new on the fall menu. Chicken /or/ vegan with lion’s mane mushroom. Pozole = hominy in a broth seasoned with chiles and citrus (in our case @keepwellvinegar bitter-lemon vinegar). Hominy = corn cooked in ash or calcium hydroxide to soften it and make its nutrients more bioavailable (in our case Oaxacan green corn grown for us by @gooddogfarm). The second sister to corn here is butternut squash and the third is beautiful plump coco bianco beans grown for us by @kitchengirlfarm.
