Omelette muffins
What you need: (6 servings)
½ green pepper
3 eggs
100ml milk
60g cheese
¾ tomato
bread (I used rye bread)
muffin tray
Directions:
Preheat the oven to 190°C (374°F). First mix eggs and milk, then grate cheese and chop green pepper and tomato to small cubes. Put cheese, pepper and tomato (in this order) in muffin tray and pour mixture of milk and eggs on them. Make sure to leave 1cm free at the top as the mixture will rise when cooked. Bake in the oven for 30mins or until firm and golden. Serve on the plate with bread.
You can also freeze them and then eat one every day. Just don’t forget to heat them. ;)
