Tomato Ketchup
400g Tomato paste 400g Glucose syrup 400g Distilled vinegar 80g Sugar 30g Salt 0.8g Clove, ground 2g msg, optional 2.4g Xanthan gum
1 Combine all ingredients in a blender. Blend until the mixture forms a smooth and homogeneous purée.
note: Adding tomato paste and vinegar before dumping in the glucose syrup will prevent the syrup from sticking to the bottom of the blender.
2 While the blender is running sprinkle in the xanthan gum.
3 Transfer to a squeeze bottle for service.
