A tasty and filling one-pot supper that combines rice, nutritious cabbage, and soft chicken seasoned with aromatic spices.
Ingredients: 1 cup rice. 2 cups chicken broth. 1 chicken breast, diced. 1 onion, chopped. 2 cloves garlic, minced. 1 small cabbage, shredded. 2 tablespoons olive oil. Salt and pepper to taste. 1 teaspoon paprika. 1/2 teaspoon cumin. Fresh cilantro for garnish.
Instructions: Heat the olive oil in a big skillet over medium heat. Add the minced garlic and onion, and saut until aromatic. Cook the chopped chicken breast until it turns brown. Add the shredded cabbage and stir until it becomes slightly tender. Stir together the rice, paprika, cumin, salt, and pepper. Add the chicken broth and heat until it boils. Once the rice is cooked and the liquid has been absorbed, reduce heat to low, cover, and simmer for 20 minutes. Using a fork, fluff the pilaf and sprinkle with fresh cilantro just before serving.
