Delicious vegan scones infused with the flavors of orange and sweet dates, perfect for a cozy breakfast or afternoon tea.
Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/3 cup vegan butter, cold and cubed. 1/2 cup chopped dates. Zest of 1 orange. 1/2 cup non-dairy milk. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract.
Instructions: Preheat oven to 400F 200C and line a baking sheet with parchment paper. In a small bowl, combine non-dairy milk and apple cider vinegar. Let it sit for 5 minutes to curdle. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt. Add cold vegan butter to the flour mixture. Using a pastry cutter or fork, cut the butter into the flour until it resembles coarse crumbs. Stir in chopped dates and orange zest. Pour in the non-dairy milk mixture and vanilla extract. Stir until just combined. Transfer the dough to a lightly floured surface. Pat it into a circle about 1 inch thick. Using a sharp knife, cut the dough into 8 wedges. Place the wedges onto the prepared baking sheet, leaving space between each scone. Bake for 15-18 minutes, or until the scones are golden brown. Allow the scones to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature. Enjoy!
