Enjoy the rich and flavorful Oxtail Pho made effortlessly in a pressure cooker. The combination of tender oxtail and aromatic spices creates the perfect bowl of Vietnamese comfort food.
Ingredients: 2 lbs oxtail, cut into pieces. 1 onion, halved and unpeeled. 1 4-inch piece of ginger, sliced. 4 cloves garlic, smashed. 1 cinnamon stick. 3 star anise. 3 cloves. 1 cardamom pod. 1 tablespoon coriander seeds. 1/4 cup fish sauce. 1 tablespoon sugar. 8 cups beef broth. 8 oz rice noodles. Bean sprouts, basil, lime wedges for serving.
Instructions: Preheat pressure cooker on saut mode. Add oxtail pieces and sear until browned. Add onion, ginger, garlic, cinnamon stick, star anise, cloves, cardamom pod, and coriander seeds to the pot. Stir in fish sauce and sugar. Pour in beef broth and close the lid of the pressure cooker. Cook on high pressure for 30 minutes, then natural release for 15 minutes. Open the lid and discard solids. Strain the broth. Cook rice noodles separately according to package instructions. Serve pho by placing rice noodles in bowls, topping with oxtail pieces, and pouring hot broth over. Serve with bean sprouts, basil, and lime wedges on the side.
