These sugar- and carb-free school lunches are a tasty and healthy choice for kids. They'll keep your kids full and focused all day because they're full of protein and healthy fats. Because you won the PackIt, you can keep these lunches cool and fresh until lunchtime!
Ingredients: 3 large lettuce leaves. 6 slices cooked bacon. 3 oz sliced turkey breast. 3 slices cheddar cheese. 1 avocado, sliced. 1/2 cucumber, sliced. 6 cherry tomatoes. 3 hard-boiled eggs, sliced. 1/4 cup ranch dressing. 1/4 cup mayonnaise. 1 tablespoon Dijon mustard. Salt and pepper to taste.
Instructions: Lay out the lettuce leaves flat. Divide the bacon, turkey, cheese, avocado, cucumber, tomatoes, and eggs onto each lettuce leaf. In a small bowl, mix together ranch dressing, mayonnaise, and Dijon mustard. Drizzle dressing over each lettuce wrap. Season with salt and pepper to taste. Roll up each lettuce leaf and secure with toothpicks if needed.
