Ingredients: 2 cups almond flour. 1/4 cup coconut oil, melted. 2 tablespoons honey. 1/2 teaspoon vanilla extract. 2 cups mixed berries blueberries, raspberries, strawberries. 1 tablespoon arrowroot powder. 2 tablespoons honey. 1 tablespoon lemon juice. 1/2 teaspoon cinnamon. Pinch of salt.
Instructions: Preheat your oven to 350F 175C. In a bowl, combine almond flour, melted coconut oil, 2 tablespoons of honey, and vanilla extract. Mix until it forms a dough. Press the dough evenly into a greased pie pan to form the crust. In another bowl, toss the mixed berries with arrowroot powder, 2 tablespoons of honey, lemon juice, cinnamon, and a pinch of salt. Pour the berry mixture into the almond flour crust. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the berries are bubbly. Allow the pie to cool before serving.
