Ingredients: 4 cups fresh or frozen blueberries. 1/2 cup honey. 1 tablespoon fresh lemon juice.
Instructions: Rinse the blueberries and place them in a large saucepan. Add the honey and lemon juice to the saucepan with the blueberries. Heat the mixture over medium-high heat, stirring frequently. Once the mixture begins to boil, reduce the heat to low and simmer for about 30-40 minutes, or until it thickens to your desired consistency. Stir occasionally. Remove the saucepan from the heat and allow the preserves to cool for a few minutes. Use a potato masher or immersion blender to gently crush the blueberries to your preferred level of smoothness.
