With this paleo-friendly recipe for homemade blueberry preserves, you can savor the sweetness of blueberries as they are. It is a healthier substitute for store-bought varieties since it is made without pectin and is sweetened with honey.
Ingredients: 4 cups fresh or frozen blueberries. 1/2 cup honey. 1 tablespoon fresh lemon juice.
Instructions: Rinse the blueberries and place them in a large saucepan. Add the honey and lemon juice to the saucepan with the blueberries. Heat the mixture over medium-high heat, stirring frequently. Once the mixture begins to boil, reduce the heat to low and simmer for about 30-40 minutes, or until it thickens to your desired consistency. Stir occasionally. Remove the saucepan from the heat and allow the preserves to cool for a few minutes. Use a potato masher or immersion blender to gently crush the blueberries to your preferred level of smoothness. Leave some whole blueberries for texture if desired. Transfer the blueberry preserves to sterilized glass jars or containers and let them cool completely before sealing. Once cooled, store the homemade blueberry preserves in the refrigerator for up to two weeks or freeze for longer shelf life.

Ingredients: 4 cups fresh blackberries. 3 cups granulated sugar. 1/4 cup freshly squeezed lemon juice. 1/4 cup water.
Instructions: After giving the blackberries a good wash, cut off any stems or leaves. Combine the blackberries, sugar, lemon juice, and water in a large pot with a heavy bottom. To help the sugar dissolve and the berries' juices come out, thoroughly stir the mixture and let it sit for about 30 minutes. After putting the pot on medium-high heat, raise the temperature to a boil. After it comes to a boil, lower the heat to medium-low and simmer it for 20 to 25 minutes, stirring now and then. If any foam appears on the surface, skim it off. Test a small amount of the jam on a chilled plate to see how thick it is. It's ready if it sets and wrinkles when you press it with your finger. If not, simmer for a few more minutes and run another test. When the jam is done, take it off the heat and allow it to cool a little. After sterilizing the jars, fill them with the hot jam, leaving a headspace of about 1/4 inch. Use bands and lids to secure the jars. To make sure the sealed jars are properly sealed and preserved, process them in a boiling water bath for ten to fifteen minutes. When storing the jars in a cool, dark location, let them cool to room temperature. It's time to taste your homemade Old-Fashioned Seedless Blackberry Jam!
