Visiting El Salvador for my birthday in 2022.
I arrived in El Salvador just before the random nationwide random massacres intended to intimidate Nayib Bukele, but President Bukele instead taught the gangs the meaning of FAFO. I left the country right as the President began his reforms. I would love to visit now and see how things have changed. I absolutely love El Salvador and I think Nayib Bukele is a political visionary and a personal hero!

I made cheese papusas for dinner the other night and they were amazing! I mean look at that cheese pull!! Everything about a papusa is delicious! They are ooey gooey from the cheese. They get nice and crispy from a shallow pan fry. Then they are topped with a delicious pickled veggie mixture and some salsa. So simple but so good!
