Though I haven’t found anything where I could specifically donate towards either Paris or Lebanon, I felt IFRC was a good option, as the funds would go towards places in need regardless, and the French Red Cross has/is responding.
Also, as I learned from here, it seems some Americans are opening their doors to French tourists who have had flights cancelled by using the hashtag “#StrandedInUs.” This may be an option to you. (Of course, be careful and exercise caution, being that it is social media and all.)
But do as you feel compelled! Obviously, everyone’s means are different and so support might not look the same depending where you are. These are just some options I found useful.
I’m not always super great at finding reliable sources and whatnot, so let me know if something better comes up, or you can simply add to this post! I’ve found more for Paris, but I’m still wanting to help Lebanon too.
