Ingredients: 200g stinging nettle leaves. 250g tagliatelle pasta. 200g crab meat. 2 cloves garlic, minced. 2 tablespoons olive oil. 1/4 cup heavy cream. Salt and pepper to taste. Grated Parmesan cheese for garnish.
Instructions: Blanch the stinging nettle leaves in boiling water for 1 minute, then immediately transfer to an ice bath to stop the cooking process. Drain and squeeze out excess water, then finely chop. Cook the tagliatelle pasta according to package instructions until al dente. Reserve 1/4 cup of pasta cooking water, then drain the pasta. In a large skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant. Add the chopped stinging nettle leaves to the skillet and saut for 2-3 minutes. Add the crab meat to the skillet and stir to combine with the stinging nettle. Cook for an additional 2 minutes. Pour in the heavy cream and reserved pasta cooking water. Season with salt and pepper to taste. Cook for another 2-3 minutes, until the sauce slightly thickens. Add the cooked tagliatelle pasta to the skillet and toss until evenly coated with the sauce.
