Traditional Cypriot Pastichio
I’ve found it quite difficult to find a really good recipe for a traditional Cypriot Pastichio as typically you can find the Greek (from Greece) type, but actually the Cypriot Pastichio is quite different and i think much better! I’ve enclosed a recipe for a big pastichio as normally there are at least 12 people around my table to eat.
Ingredients
FOR THE MINCE 800g Minced Turkey (traditionally using Pork) Olive Oil 1 large onion (chopped fine) Oregano 1 x pod of garlic 3 tablespoon honey 5 x tablespoons sundried tomato paste 700g tomato passata
FOR THE PASTA 1 kg Macaroni (try to get the long hollow tubes of spaghetti style pasta) Olive Oil Salt 1 x Block grated Halloumi 2 x Tablepoons Mint (dried is fine) 2 x Teaspoons ground cinnamon FOR THE BECHEMEL 120g melted butter 10 tablespoons plain flour 7 glasses of full cream milk 3 eggs half pack of grated Halloumi SPRINKLE half teaspoon gound nutmeg Handful of grated halloumi
Method
First make the mince. Heat some olive oil in a pan and fry the onions until translucent. Add the garlic, fry for a minute. Then add the mince and stir and brown. Likely 10 minutes. When browned, add the sundreid tomato paste and honey and fry for a further 2 minutes. Sprinkle with oregano and add the passata. stir and cook for around 15 mins on a low heat. Season with salt and pepper.
Then in a large pot of boiling water, cook the macaroni until fully soft and cooked. (follow the packet instructions) add some olive oil to the boiling water to stop is sticking. Drain the pasta and add it back to the pot it was cooked in (off the heat). Add a little olive oil, then all the grated halloumi (form 1 block), stir. Then add the mint, and the cinnamon. Stir and set aside.
Now make the bechemel. Over a medium heat, melt the butter and once melted, add the flour. Fry over a medium heat and keep stirring. Heat the milk up to just below boiling and add a ladel at a time to the butter, flour mixture. Make sure the pan if off the heat while you do this for the first few ladels then add back to a medium heat and keep whisking and stirring until youve added all the milk. heat to a simmer and until thickened. Take off the heat and set aside for 3 minutes. Stir is one egg at a time and whisk quickly while you add each one.Then add the grated halloumi. This is now ready.
In a deep sided large lasgane dish, add first a layer of the pasta (half of it) on the bottom. then add a layer of the mince. Then a final half of the pasta on top. Finally add the bechemel creme to the top. Sprinkle with the nutmeg and grated halloumi.
Bake in the oven 180 degrees for 20 minutes or until golden brown and bubbling on top. Allow to cool for 15 minutes and serve!
