Yum! Delicious Dishes Delivered Right to Our Doorstep
Have we ever told you just how much we love the Peach Dish concept? Pretty sure we have.
Getting meals via Peach Dish has been an exciting, healthy and learning adventure that we've been able to experience and now you can too!
The folks at Peach Dish have just changed up the shipping and delivery options. Instead of a $20 meal once per week arriving fresh on your doorstep, you can now get 2 meals for $50, delivered in the same box, directly to your home or office.
Last week was a busy week filled with holiday parties so when our Peach Diah meal came on Wednesday, the first thing we did was unpack it to see what was parishable and what needed to be refrigerated. The two menus included mahi mahi and chateau wings that needed refrigerated sooner rather than later though they were almost completely frozen upon arrival. We then chose to put the fennel bulb and goat cheese in to cool as well.
Two days and many delicious pounds if pork later thanks to Bone Lick BBQ, we were finally ready to start our Peach Dish culinary adventure.
First up was an entree of 4-Pepper Goat Cheese and Crackers. As simple as spreading this super-delicious-totally-going-to-add-this-to-the-usual-shopping-rotation cheese dish was to prepare and eat, it was perfect. After a long day of work, sometimes you don't want to have to cook three full courses and it was the perfect alternative.
Next up was Grapefruit & Tarragon Mahi Mahi over jasmine rice which was a light and flavorful dish that served to remind us that we were not, in fact, going to a Caribbean island for a vacation any time soon.
The grapefruit and tarragon mixture was a unique additive to the fish and when combined with the coconut rice, fennel and fillets made for a well rounded bite. If you haven't cooked fennel before, be aware- while cutting it you will think that you're about to cook black licorice. Don't be scared off. Once it properly cooks (we braised it for 10-12 minutes), you'll have a delicious veggie addition to your meal that tastes nothing like licorice.
Even through Peach Dish provides you wish enough ingredients to make everything, sometimes you don't need as much as they send. For instance, we only needed half the grapefruit and tarragon that was sent to comfortably cover our mahi mahi so I discarded the extra tarragon and added a sprinkle of sugar to the grapefruit, eating it as post-dinner pre-dessert.
Also, if you've never cooked your rice with coconut milk replacing half of the water it usually calls for, do it. You may never go back to the 100% water method again.
Lastly, we used the leftover coconut milk, some brown sugar and cocoa powder to make a coconut milk hot chocolate. While it wasn't high on our favorite tasting list, it was easy to make.
The next day, we tried out Peach Dish meal #2 for dinner and started by putting a demi baguette of Holeman & Finch French Bread in the over to warm.
Next, we quickly seared the Chateau Wings, leaving them juicy and medium rare in the center, as caramelized onions were cooking in the same pan on either side of the meat.
Lastly, we peeled two sweet potatoes, chopped them into 1/2 inch bits, boiled them for a few minutes then drained and combined the bits with juice from a tangerine, butter, salt and pepper.
Yes, that is a super quick description of what we did. Why? Because it only took about 12 minutes to prepare the entire meal. From cutting the onions to plating the entire meal was ready for consumption in that short amount of time. It was FANTASTIC!
The meal was as filling as it was delicious (okay, it was beyond delectable- maybe our favorite Peach Dish meal yet) and will certainly be added to our monthly make-at-home dining options.
After relaxing for a while post-entree we decided to try our hands at the looming pomegranate dessert. Thankfully, Peach Dish has how-to videos you can quickly watch on their blog with meal prep tips. The how to deseed a pomegranate one proved especially helpful especially when considering how much juice it contained.
We LOVED eating the fresh pomegranate (something we've never done before) and when combined with nibble of chocolate it was a great way to cap off a meal.
But what about all that juice? Well, if life gives you pomegranates, make a cocktail! A fruity pomegranate, lemonade, bourbon cocktail was concocted using a few of our own supplies and was the perfect addition to a tasty meal.
