Indulge in the delightful combination of sweet peach frozen yogurt with aromatic basil sandwiched between soft and chewy snickerdoodle cookies. These vegan treats are perfect for a refreshing dessert on a warm day.
Ingredients: 2 cups vegan yogurt. 2 ripe peaches, peeled and diced. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 8 vegan snickerdoodle cookies. Handful of fresh basil leaves.
Instructions: Put the diced peaches, maple syrup, vanilla extract, and vegan yogurt in a blender. Mix until it's smooth. After putting the mixture into an ice cream maker, follow the maker's directions for churning it until it becomes creamy. Put the peach frozen yogurt that has been churned into a shallow container. Freeze it for at least two hours, or until it is firm. Put a scoop of frozen yogurt on one of the snickerdoodle cookies once the yogurt is firm. Sandwich another snickerdoodle cookie between two scoops of frozen yogurt. Top each with a few fresh basil leaves. Do it again with the rest of the frozen yogurt and cookies to make more sandwiches. You can eat the sandwiches right away, or you can wrap each one in parchment paper and freeze them to enjoy later.
