The creamy goodness of cheesecake and the sweetness of ripe peaches come together in Peach Cheesecake Salad, a tasty and refreshing dessert. It's great for summer or any time you want something fruity and creamy.
Ingredients: 4 ripe peaches, diced. 8 oz cream cheese, softened. 1/2 cup powdered sugar. 1 tsp vanilla extract. 1 cup whipped cream. 1/2 cup graham cracker crumbs. Fresh mint leaves for garnish optional.
Instructions: Put the softened cream cheese in a bowl and beat it until it's smooth. Mix the powdered sugar and vanilla extract into the cream cheese until everything is well mixed together. To make the cheesecake mixture, slowly fold in the whipped cream. Put the diced peaches in serving glasses or bowls first, then add a spoonful of the cheesecake mixture. Add more layers until the glasses are full, and finish with a layer of the cheesecake mix on top. Add graham cracker crumbs to the top of each serving. Put it in the fridge for at least 30 minutes before you serve it. If you want, you can add fresh mint leaves as a garnish. Enjoy it cold!
